Gelato conains less fat than traditional, "American Style" ice cream. It is churned at a lower speed, minimizing the the amount of air whipped in. Because of this, gelato is a very dense. Gelato can weigh twice as much as regular ice cream. The density, along with the lower butterfat and the freshness of ingredients, delivers an intense experience rich in flavor.
